PERAFITA NEGRO 2017:

Vineyards: Vineyard located in Cap de Creus on slate soils, with great light exposure and influenced by the tramontada brought by the saline air from the Mediterranean.

Winery: Each variety is harvested and vinified separately. They carry out a pre-fermentative cold maceration to bring out the varietal, year, and terroir characteristics to the maximum. The ageing, in French oak barrels, lasts for 11 months, at which time the final cupatge of the wine is made.

Tasting and pairing notes: Garnet red with a tile nuance. Aromas of jasmine and margarita, with more complex touches after its time in barrel. On the palate there are toasted notes, dark chocolate, tobacco and caramel. Dense, with good structure and balanced acidity. Wine with good presence and persistence in the mouth. It pairs with roasted or stewed meats, mature cheeses and foie.
